ETHIOPIE ALEMAYEHU HILLO

This coffee comes from Alemayehu Hillo, a dedicated farmer in the Yirgacheffe region. Each year he produces around 12 metric tons of coffee of which 9.6 tons prepared as specialty coffee for export.
The ripe cherries are carefully handpicked and dried on
120 raised beds, turned six times a day for even drying. The drying process takes 18–21 days, ensuring the beans reach their optimal moisture level resulting in a clean, expressive and high-quality cup.
His dream is to establish his own washing station, allowing him to fully control processing and quality while securing better prices and recognition for his coffee.

Expect a beautifully balanced cup with a candy-like sweetness, rich chocolate notes, soft nougat and a subtle touch of spices.
